Lovely Lemon Slice

It's fair to say I'm pretty under the pump right now, primarily as I'm one of life's perfectionists and as a result put myself under far too much pressure to succeed.  So what does one do when they have a mountain of work to complete & a 'To Do' list as long as their arm??? ...Why bake Lemon Slices of course :)  One of the quickest, easiest, yummiest things I know how to make.  Here's my secret recipe:

-Melt 370g of butter.
-Add 2 cups of plain flour / 1 cup of sugar / 2 cups of shredded coconut / the zest & juice from 2 lemons / 1 teaspoon of vanilla essence  and 2 eggs.
- Mix well with a spoon & bake in the oven at 170°F for 35 minutes.
- Leave to cool and when cool thinly cover with icing consisting of: 1.5 cups of sifted icing sugar / 3 tablespoons of lemon juice and some zest  & 30 grams of melted butter.
-Cut into slices and promptly devour :) YUM!

From Where I'd Rather Be...

Life is currently hectic, something I'm not complaining of since I know it's better to be busy than bored.  In times of stress however, this photo does wonders.  We've just booked a holiday to Thailand for Christmas & despite being 9 months away it is most definitely inspiration to work hard!  Beach, Ocean, Book...I shall be there before you know it!

Things · Organised · Neatly

I'm a bit of a neat freak...there, I said it, it's out!  I love when my couch is neatly in line with my coffee table, I love when my bookshelf appears even & balanced, I love when things just fit & I luuuuurve when all the tins in my pantry are neatly lined up (labels facing outwards) like little soldiers in a row!  I've been told that my hand writing looks like word processing and I have issues with drawing lines free hand, somebody pass me that ruler!  Some may class it as a tad obsessive compulsive but I prefer to call it conscientious!  Imagine my inner glee then when I spotted this amazing blog dedicated to things organised neatly.  When life gets crazy & my apartment's a mess, I shall head to this blog & it can satisfy my inner need for symmetry!  ...& yes, I realise life's more fun when you colour outside the lines, it's something I'm working on :)

Wow!  How rad are these mini bus rolls?  They're available in seven different designs with the option to customise your own.  I love Number 3 for our apartment and how fabulous would number 1 or 7 be for a family home?  The line about the little monkeys is super cute :)

I'm currently swamped under a mammoth pile of readings I have to complete for University which instantly turned my memory to this amazing photo of Stockholm library!  It's interesting how something I love, such as reading, can be turned into such a tiresome task!  Onward I go...!

Looking into the Past

Jason E. Powell has created this great series of images by finding & printing photos of locations & then holding the photographs up in the modern day location that the original shot was taken!  How clever!  I love how much detail has been paid to making sure the prints are lined up exactly & how the contrast between things such as the cars is made so apparent.  Check out more of his photo series here!

Holiday Day Dreaming

I've been back at Uni a grand total of 1 week & am already feeling massively behind & under the pump!  As a result my mind has turned to holiday day dreaming...one of my most favourite things to do!

Singita, meaning 'place of miracles' is a group of luxury African game reserves that pride themselves on sharing a remarkable part of the world in a manner that is highly respectful not only to the natural environment, but also to the local communities.

We've always wanted to do a Safari & explore parts of Africa but never more so than when browsing their amazing website & mind blowing photographs.  If I close my eyes right now I'm chilling in that bed next to the stream :)

Cross-Stitch Mural

WowWowWow!  I am head over heels with this AMAZING cross-stich style painting by Eline Pellinkhof.  So simple yet so effective & I adore the colours that have been used!  Living in a rental property really sucks sometimes, I want to dash out, buy some paint & cover my walls this second...instead I shall stare at this pretty picture & continue to dream some more, Sigh...!
